Hooked recipe for the ultimate crispy fish burger

Whether it's on a weekday, as the start of a good evening or on Sunday after a good evening, there's nothing like a good, crunchy and flavorful burger. Well, it would have to be a good, crispy fish burger. If you ask us, there's nothing quite as heavenly.

Crispy fish burger with tartar sauce and guacamole

For 4 people

Approx. 35 min. in total

Ingredients for fish burger:

  • 600 g. cod fillet
  • 2 eggs
  • 50 ml. whole milk
  • 3 tsp. butter
  • 100 g. panko breadcrumbs
  • 500 g. olive oil
  • 4 brioche buns
  • 1 piece of red cabbage
  • 1 lemon
  • Salt and freshly ground pepper

Ingredients for guacamole:

  • 4 ripe avocados
  • 3 tablespoons sour cream 18%.
  • 1 small clove of garlic
  • 1 small red onion
  • 0.5 lemon
  • 1 tsp. cayenne pepper
  • Salt and freshly ground pepper

Ingredients for the tartar sauce: 

  • 1 bunch dill
  • 1 bdt. fresh tarragon
  • 1 bunch chives
  • 4 pcs. gherkins
  • 2 tbsp. capers
  • 100 g. mayonnaise
  • 1 dl. 18% sour cream
  • 1 tsp. dijon mustard
  • 0.5 lemon
  • Salt and freshly ground pepper

Here's how to do it

Start with the tartar sauce. 

  1. First finely chop all the herbs, capers and gherkins. 
  2. Mix the finely chopped ingredients with the sour cream, mayonnaise and Dijon mustard in a bowl. 
  3. Squeeze the lemon and add it with a little of the zest to the bowl, seasoning with salt and pepper as needed. 
  4. Put this in the fridge.

 

Then make guacamole. 

  1. Remove the stone from the avocados and pour the contents into a bowl. Roughly mash the contents, leaving a few pieces of uncheesed avocado.
  2. Peel the red onion and garlic. Roughly chop the red onion, squeeze the garlic and add both to the bowl. 
  3. Pour the sour cream into the bowl and add the cayenne pepper and lemon juice. 
  4. Season to taste with salt and pepper. 
  5. Finally, place it in the fridge. 

 

No more fish burger.

  1. Start by cutting the cod into four equal parts.
  2. Add the eggs and whole milk to a bowl - a flat bowl can also be used here. 
  3. Pour the breadcrumbs onto a plate and season with a little salt and freshly ground pepper.
  4. Now take the fish and coat it first in the egg mixture, then the breadcrumbs, then the egg mixture and finally the breadcrumbs. 
  5. Meanwhile, rinse and cut the red cabbage into short strips.
  6. Heat the olive oil to 170°C in a thick-bottomed pan and fry the fish in the oil on both sides.
  7. Melt the butter in a pan. Cut the brioche buns in half and add them to the pan. Toast the buns in the butter on the inside of both the top and bottom bun. 
  8. Spread the bottom bun with guacamole, add the fish, place the red cabbage on the fish and top with the tartar sauce and the top bun. 
  9. Enjoy your meal.

The perfect burger recipe for a hot summer day

There's nothing quite like enjoying a good fish burger in the garden on a hot summer's day. Personally, we love a cold beer or a glass of chilled rosé wine to top off the taste of fish. If you're extra hungry, you can always add vinegar fries to your fish burger as a finishing touch. 

This recipe is perfect for the whole family, young and old alike. It's a meal you can all gather around and enjoy, and it's a great way to offer fish, especially to the youngest members of the family, in a fun, delicious and crispy way.
