Ingredients

Poké:

  • 450g raw salmon (must be frozen at -18 degrees for at least 24 hours)
  • 1 tbsp cane sugar
  • 1 lemon, juice
  • Salt and pepper


Bowling:

  • 2 dl jasmine rice
  • 1 avocado
  • ½ mango
  • 2 spring onions
  • 100g pointed cabbage
  • 1 carrot
  • ½ cucumber
  • 100g edamame beans, thawed
  • 2 tbsp pickled red onions
  • 2 tbsp toasted sesame seeds


Dressing:

  • ½ dl soy
  • 1 tsp grated ginger
  • ½ lime, juice

Here's how to do it

  1. If you don't already have leftover rice in the fridge, cook the rice as directed on the packaging and refrigerate.

  2. Cut the salmon into small cubes. Mix cane sugar, lemon juice, salt and pepper in a bowl, toss the salmon cubes in the marinade and refrigerate.

  3. Dice the avocado and mango, thinly slice the spring onion and cabbage, and cut the cucumber and carrot into thin strips, which is easily done with a potato peeler to create long ribbons.

  4. Grate ginger and mix with soy and lime juice.

  5. To assemble the dish, place a layer of rice in the bottom of a bowl and then place the fish and vegetables in small heaps on top of the rice. Top with pickled red onions, spring onions and toasted sesame seeds before pouring on the dressing. Quantity as desired. Enjoy!
