Hake recipe - Cook to perfection in the pan or oven

Crispy and juicy fish with this recipe

Hake can be cooked in many different ways - we're particularly fond of the fried version, but it can also be cooked in the oven.

With this hake recipe, you'll get a crispy yet juicy fish as we guide you on how to cook it to perfection. 

Ingredients for hake recipe

  • 150 grams hake
  • Olive oil for frying
  • Butter
  • Salt and pepper 
  • A squeeze of organic lemon

How to get started with hake

Hake is in many ways very easy to work with. It's in season all year round - and can be bought at most fishmongers and several supermarkets that also stock the delicious food. 

  1. Although typically filleted when purchased, it's always a good idea to check the fish for bones before starting our recipe 

  2. Carefully score the skin lengthwise and crosswise. Avoid cutting too deeply so that you hit the meat 

  3. Pour a little olive oil in a pan and heat up well

  4. Meanwhile, season with salt and pepper. You can also sprinkle on some chili flakes if you prefer a little extra bite to your recipe 

  5. Place your hake on the hot pan, skin side down. Fry for about 30 seconds and then turn down to medium heat. 

  6. Continue frying the fish on the skin side until the flesh turns a milky white color

  7. Add a knob or two of butter and let it brown while you turn the fish. Count down from 10 - and your fish is now ready to serve

  8. Finish with the juice of half a lemon for plenty of flavor and acidity to your recipe.
