Boiled cod - the classic with mustard sauce and accompaniments

It's a classic, most people know it and it's easy to make, so why not make some boiled cod the next time you have fish on the menu at home.

Cod is a very popular food in Danish homes around Christmas time, which is why not many people think about the brightly colored fish when the other seasons of the year are approaching. And that's a shame. Cod is a fantastic food that can be prepared in a multitude of different ways, so why miss out?

Among some of the most popular ways to eat cod is boiled cod. It's a dish that has been around for longer than most people can stand, which is why many Danes have enjoyed boiled cod throughout their childhood, youth and adulthood.

However, boiled cod is no longer a dish you serve at dinner with friends or family gatherings, but we think it can, which is why we've written our recipe for boiled cod below, which wins every time.

Recipe for boiled cod

For 4 people. 

Approx. 30 minutes

Ingredients for boiled cod: 

4 cod fillets (150-200g)

2 L water

2 tbsp salt

1 dl vinegar

1 bay leaf

6 peppercorns

25g butter

3 tbsp flour

2 dl milk

3 dl broth or the cooking water from the fish

1 tbsp Dijon mustard

2 eggs

200g bacon cubes

200g pickled beetroot

1 kg potatoes (possibly new potatoes)

Here's how to do it:

  1. Peel and boil the potatoes until tender.

  2. Boil two liters of water, mix in salt, vinegar, bay leaf and peppercorns and carefully place the fish in the water.

  3. Bring the water to the boil.

  4. When the water boils, remove the pot from the heat and let the cod steep under a tightly closed lid for about 10 minutes. Remove any foam from the top of the soup.

  5. Boil the eggs until hard-boiled, cool and peel them.

  6. Melt the butter in a sauce pan and then add the milk a little at a time. Next, add the stock a little at a time until the sauce has the right consistency. Let the sauce cook for 3-5 minutes.

  7. Season the sauce with mustard, salt and pepper. Do not allow the sauce to boil after adding the mustard, as this can give it a bitter taste.

  8. Fry the bacon cubes until crispy, dice the pickled beets and eggs and serve. Enjoy!

When you need to get the fish for boiled cod, you might be tempted to go to the supermarket and do your shopping, but this is just an unfortunate trend that is unfortunately on the rise.

We would definitely recommend going to your local fishmonger when buying fresh fish for boiled cod and other delicious dishes such as salmon lasagna and fried herring. Here you get the fish at its freshest, and the fishmonger can certainly give you some good tips on how to best prepare it.
