Recipe for lobster tails in the oven

For 4 people. 

Approx. 30 minutes

Ingredients for lobster tails in the oven: 

100g soft butter

1 clove of garlic

1 handful of herbs (e.g. parsley, basil, dill, etc.)

1 lemon

16 langoustine tails

1 pk. mixed salad

1 flower, preferably coarse

salt and pepper

Here's how to do it:

  1. Preheat the oven to 180°C.

  2. Stir the butter well to give it a uniform consistency.

  3. Finely chop or press the garlic into the butter.

  4. Finely chop the herbs and fold into the butter mixture.

  5. Cut the lemon into six wedges and use the juice from one to season the butter mixture with salt and pepper. Mix well.

  6. Split the lobster tails on the underside and remove the intestines.

  7. Place the lobster tails shell side down and pour the butter mixture into the tails.

  8. Cook the lobster tails in the oven for about 15-20 minutes.

  9. Serve the lobster tails with fresh salad, crusty bread and a lemon wedge.

Our tips for lobster tails in the oven

Removing the intestines from lobster tails may seem like a difficult project, but it doesn't have to be. It's just a matter of knowing the right technique.

If you grab the middle flap at the very end of the lobster tail, you will be able to twist it and just as gently pull out the entire intestine. When buying lobster tails, you'll often be lucky enough to have the intestines removed. If you buy your langoustine for lobster tails in the oven from the fishmonger, you can also have the fishmonger pull out the tail for you - if this hasn't already been done.

Once you have made lobster tails in the oven, you will be left with the shells, which many people just throw away as garbage. If you save the shells instead, they can be used to make a delicious lobster bisque another day. The shells can easily be frozen and used another day.
