Fried herring - Get Hooked's recipe, perfect for the lunch table

Fried herring in vinegar is a classic on the Easter, Christmas and smørrebrød table, along with curry herringand anything else would be a shame, as they are delicious. The best are the fried herring when they are homemade.

They're easy to buy ready-made at the supermarket, but why not make them yourself? The homemade herring tastes best because the acid and sweetness balance can be adjusted so you can get the flavor just the way you like it. 

Whether you top your fried herring with raw onions, capers or fresh dill, we've put together a recipe for the best fried herring - Hooked style, of course. 

Recipe for homemade fried herring in vinegar

For 4 people. 

Approx. 20 min. in total

Ingredients for fried herring: 

4 fresh double herring fillets

Dijon mustard

2 tbsp rye flour

Small dill sprigs

13 g butter

Salt and freshly ground pepper

Eddikelage

1 ¼ deciliter of vinegar

½ carrot, sliced

½ sliced zittauer onion

1 bay leaf

75 g. brown sugar

6 black peppercorns

How to proceed

  1. Cut the the dorsal fin from the herring fillets and remove any bones.
  2. Rinse the fillets and then pat them dry with a paper towel.
  3. Spread the herring fillets with Dijon mustard and sprinkle with dill sprigs, salt and pepper. 
  4. Fold each herring fillet lengthwise or crosswise, and turn them in rye flour.
  5. Melt the butter in a frying pan until golden and fry the herring fillets at a steady heat for approx. 3 - 4 min. on each side.
  6. Place the fried herring in a deep dish and let them cool while you make the vinegar sauce.
  7. Bring the vinegar, brown sugar, zitta onion, carrot, bay leaf and peppercorns to the boil for a few minutes. Let the stock cool slightly and pour it over the herrings.pour it over the herring.
  8. Cover and place on the counter for about 1½ hours and serve, or refrigerate the herring fillets and marinade until ready to eat. For best results, the herring fillets should be left in the stock for a few days.
  9. Serve your fried herring in a bowl with herbs on top either cold or hot from the oven.

 

We recommend making a large batch of fried herring in vinegar while you're at it - fried herring can easily keep for a few days in the fridge.

We usually associate fried herring with Christmas or Easter lunch, but on a normal weekday, fried herring can spice up the lunch table and make rye bread sandwiches a little more exciting.
