Dark cod recipe - Fresh fish in the oven with delicious accompaniments

It's always the season for Atlantic cod

Pollock is in season all year round, which is why it is often found in fishmongers and some supermarkets. However, it is at its best eating quality between June and December.

Pan-fried saithe with sweet potato mash and apple salad

For: 2 people

Time: 30 min.

Ingredients

  • 800g fillet of tenderloin
  • 1 ½ lemons
  • 1 kg sweet potatoes
  • 150g butter
  • 1 apple (preferably a tart one, like Granny Smith)
  • 100g fresh spinach
  • 200g salad cheese
  • ¼ - ½ fresh chili (can be omitted)
  • 1 tbsp oil
  • Salt and pepper

Here's how to do it

  1. Peel the sweet potatoes and cut them into small cubes. Cook until tender.

  2. Meanwhile, cut an apple into small cubes, chop the chili and mix with spinach and salad cheese before sprinkling oil and a little lemon juice over the salad.

  3. Halve the lemon and in a very hot pan, sear the two halves on the cut side. Fry until caramelized.

  4. When the sweet potatoes are done and tender, mash them with butter. Season with lemon and salt and pepper to taste.

  5. Finally, divide the tenderloin into 4 equal parts, sprinkle with salt and pepper and fry for 3 minutes on each side.

  6. Arrange the fish on a bed of mashed sweet potato with the salad on the side. Drizzle the burnt lemon over the fish and eat. Enjoy!

Dark and light cod

The saithe actually comes in both a dark and light version. Both are part of the cod family and are similar in appearance. However, the taste and texture of the two fish are different. It is also important to note that if a recipe recommends saithe, it is always a dark saithe that is being referred to. 

The dark saithe is also known as a gray saithe due to the dark gray to black back of the fish. The meat is also slightly darker than cod and softer in texture, as the fish does not have fins like cod. The meat is also lower in fat compared to more fatty fish such as salmon or mackerel. 

The flavor of the fish is umani, so you can go all out with spices, salt and cheese, as the flavor of the fish is quite strong compared to other fish. If you don't want the umami flavor to be so prominent, you can use both salt and sugar when steaming or marinating the fish. 

A light saithe is, in contrast to a dark saithe, more fine and firm in texture. The taste is also milder than regular saithe. Both types of saithe can be used in many different dishes and prepared in many different ways. The light-colored saithe would be good to use in, for example, fish cakes. Both fish can be cooked in a pan, in the oven or on the grill. 

The light pollock has twice as much fat as the dark pollock, however, they are both still very low in fat and calories. Both pollock fish contain vitamin A, while only the dark pollock contains vitamin D.  

Tip: If you have a few extra hours before serving the pollock, try sprinkling some fine salt on your pollock and refrigerate it for a few hours. The salt will give the meat more bite and firmness when you cook it.
