Buy them best (and cheapest) at the port

Norway lobster is fished all year round in the Kattegat, Skagerrak and the North Sea. However, the peak season for the popular shellfish is in August and September, when fishing takes place both day and night.

It dies immediately after being caught, and this is important to keep in mind when creating a recipe based on Norway lobster. For the same reason, the shelf life is very short, which means you should buy the shellfish from a trusted fishmonger.

However, the best, and often cheapest, option is to buy them directly from the port and cook them within one to two days of being caught. That way, you're guaranteed plenty of freshness, flavor and quality when you shine in the kitchen with your favorite langoustine recipe.

How to clean your langoustine

Before you can shine in the kitchen and create that mouth-watering langoustine recipe, it needs to be prepared and cleaned. Luckily, both are very straightforward.

Place the langoustine flat on its 'back' on a cutting board. Then remove the intestine and stomach. The intestine runs along the back and is also recognized as a small black string, while the stomach is located behind the eyes. Both are removed by 'splitting' it down the middle, where there is a natural groove between the shellfish's legs. The inside of the shellfish is full of flavor, so it's important that you only remove the intestines, stomach and any sand and gravel. The rest will give your recipe plenty of flavor, character and richness.
